Clod heart is a super flavourful cut from the heart of the shoulder clod (chuck primal). This inexpensive cut is lean and can be slow cooked or smoked using moist heat. Many folks prepare it as they would a brisket or pot roast. Alongside a nice intense beefy flavour, the beef clod heart is known for its lean texture offering a slight contrast to a brisket.
