Beef tongue...it's amazingly tender and very flavourful when cooked correctly. Sadly, beef tongue does not get the respect it deserves. It’s made from muscle, just like steak. The difference is that beef tongue has a lot more connective tissue and collagen fibres, which makes it tougher than steak but richer in flavour. Perfect for braising on a cold winters day or do it low and slow on the smoker!
