Our NY Strip is hands down one of our favourite products. It boasts some lovely marbling throughout, which makes it perfectly tender. If you've ever had a restaurant or grocery store NY Strip, and thought it was a bit chewy- it likely didn't have much marbling in it. Ours are packed with beefy flavour and need no more than some course kosher salt & freshly cracked pepper. (Sometimes the best things in life are simple) We prefer to sear ours on a piping hot grill for 2-3 mins a side. This gives us a perfect medium rare. But use a trusty meat thermometer to get your preferred doneness. Then we like to sit them on top of a small pile of compound butter as they rest for 8 mins or so.
